Healthy Christmas Recipes to try this Season


For Christmas, we love gifting our patients with tips, ideas and even little treats to use for the season. This year we've partenered with Healthy Eats by Kesh to share with you three Christmas Recipes that you can try

Snack on some yummy Christmas Fruit & Nut Clusters, a delectable Chocolate Cake or a delicious and crisp seasonal salad!

Fruit & Nut Clusters

Ingredients:

  • 1 cup milk/semi-sweet/dark chocolate chips

  • 1/2 cup roasted almonds (crush for smaller size if desired)

  • 1/4 cup pumpkin seeds (toast for added flavor)

  • 1/4 cup raisins/cranberries

Instructions:

  1. Put the chocolate chips in a microwave-safe bowl and cook in 30-second increments until fully melted.

  2. Once the chocolate is melted, toss in other ingredients and mix until coated.

  3. Place 1 tablespoon of the mixture onto a lined tray and refrigerate for 15-30 minutes, or until chocolate is set.

Chocolate Cake

Ingredients:

  • 1 cup all-purpose flour

  • 1/2 cup wheat flour

  • 3/4 cup brown sugar

  • 3/4 cup chocolate chips (omit to make vegan)

  • 3/4 cup chopped nuts

  • 1/3 cup unsweetened cocoa powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 1/2 cup water

  • 1/3 cup vegetable oil

  • 1 tsp distilled white vinegar

  • 1/2 tsp almond extract OR 1 tsp vanilla extract

Directions:

  1. Preheat oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan or line cupcake tin (makes about 12 cupcakes).

  2. Sift flour, sugar, cocoa, baking soda, and salt together in a large bowl.

  3. Add water, oil, vanilla, and vinegar; mix until smooth.

  4. Pour mixture into the prepared pan.

  5. Bake until a toothpick inserted into the center comes out clean, about 45 minutes.

Feel free to add chocolate chips or nuts after the batter is mixed.

Seasonal Salad

Salad Ingredients:

  • 1 cup chopped kale/lettuce/watercress/patchoi/baby spinach

  • 1/2 cup diced tomatoes

  • 1/2 cup diced sweet peppers

  • 1/2 cup corn kernels

  • 1/2 cup diced cucumbers

  • 1/2 cup roasted chickpeas

  • 1/4 cup roasted sunflower seeds

  • 1/4 cup onion


Instructions:

Combine all ingredients into a large bowl and mix well.


Vinaigrette Ingredients:

  • 1/4 cup lime juice/vinegar of your choice

  • 1/2 cup olive oil (or any other neutral oil)

  • 1/2 tsp black pepper

  • 1/4 tsp salt

  • 1 Tbsp honey/agave/brown sugar/granulated sugar (optional)

  • 1 Tbsp grated garlic

  • 2 tsp mustard


Instructions:


Method 1: Add lime juice, garlic, mustard, honey, salt, and pepper to a small bowl, and whisk to combine. Then add the oil and mix until combined well.

Method 2: Add all ingredients to a blender and blend.
